Mushrooms

Skagway is the Mushroom Capital of the world.  We have more varieties of mushrooms growing here than anywhere.  The above are the horse mushroom which is an agaricus and choice to eat.  They grow larger than normal here.

The next is the fly agaric classified as poisonous; however after reading in Audubon's is hallucinogenic.  I prefer to enjoy the beauty of this mushroom which grows from 1" to around a foot across the cap. I plant them in my rock garden as they look right at home with my little gnomes.

The mushroom on the right is my favorite and is a Matsutake.  It has a very distinct taste and very firm texture.  It keeps its light color when cooked and has a slight cinnomon taste.  We find them in November before the frosts hit on the cliffs under the conifers.

I will be adding more pages on the various mushroom that we find here.  Many are of the choicest varieties making many dishes truly superb.

Grab a basket and take a trip with me in the woods and out on the flats to gather them after any rain from spring thru late fall.
